My Big Fat Greek Burger

My Big Fat Greek Burger

by Wendy M.

Serves: 2
Burger Ingredients:
16oz ground lamb
1 finely chopped shallot
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/8 teaspoon ground cinnamon
1 teaspoon paprika
1 tablespoon olive oil
Salt and pepper to season
1 sliced vine tomato
Fresh cilantro
2 soft oval (submarine) buns

Tzatziki ingredients:
4oz Greek yogurt
1 small clove of garlic grated or crushed
4oz seedless cucumber
¼ teaspoon sea salt
½ teaspoon paprika
Pepper

Method:
Heat olive oil and sauté shallot for two minutes. Do not brown. Add ground spices and sauté for further 30 seconds to activate the flavors. Remove and cool.
To prepare the tzatziki, peel and de-seed the cucumber. Grate and place in a sieve sprinkled with a quarter teaspoon sea salt to remove excess water. Squeeze the excess water out of the cucumber, add the yogurt, paprika and pepper and mix. No need to add any more salt.
Place lamb in a bowl and add shallot mixture. Mix and form into two 8oz oval patties. Season with salt and pepper and cook patty in a griddle pan or barbecue to medium-rare, then let stand for five minutes loosely covered with foil to bring temperature to medium.
Slice the buns in half, hollow out the top half of the bun and brush both sides with olive oil and lightly toast under the broiler. Place tomato slices on the bottom half of the bun, then the lamb burger patty, spoon tzatziki over the patty, top with cilantro leaves and the hollowed-out top of the bun.
Enjoy with sweet potato fries seasoned with paprika and garlic salt, and a small portion of tzatziki.

The Horseradish Burger

The Horseradish Burger

by Wendy M.

10oz ground chuck
2 teaspoons prepared hot horseradish (strained), or 2 teaspoons fresh grated horseradish
I teaspoon Worcestershire sauce
Salt and pepper to taste
1-2 tablespoons Caramelized onions
Sliced dill pickle chips
One slice horseradish cheddar, cut in half
1 seedless hamburger bun

Method:
Mix beef, horseradish and Worcestershire sauce together and form a patty. Season the outside with salt and pepper.
Cook patty in a griddle pan or barbecue to medium-rare, then let stand for five minutes loosely covered with foil to bring temperature to medium.
Cut hamburger bun and half and place one half of the cheese on the bottom half of the bun and melt under the broiler. Placed caramelized onions on top of the melted cheese. Place the burger patty on top of that, and add the other half slice of cheese and return to broiler to melt it.

My Brilliant Korea

My Brilliant Korea

by Wendy M.

Serves: 4
Ingredients:
24oz ground chuck
4 teaspoons grated onion
4 teaspoons Worcestershire sauce
Salt and pepper to taste
8 slices Monterey Jack cheese with jalapenos
4-8 teaspoons Momoya kimchee base
4 teaspoons mayonnaise
Pickled jalapeno slices
Sliced dill pickle chips
4 French hamburger buns
2 tsp Butter

Method:
Place Worcestershire sauce and onion in a bowl and mix. Add ground chuck and mix.
Form into four 6oz. balls, cover and refrigerate for no more than 2 hours. Press down into patties and season the outside with salt and pepper.
Cook patties in a griddle pan or grill for 3 ½ mins on one side and 2 ½ mins on the other side. Set aside and let stand for 5 mins loosely covered with foil.
While burgers are cooking, slice the French hamburger buns in half and hollow the bread out of the top half of the bun. Place the bottom half of the buns on a baking sheet , butter them and lightly toast. Place one slice of cheese on the bottom half of the bun and melt under the broiler. Place a cooked burger patty on top of that. Spoon 1-2 teaspoons of kimchee base on each burger patty. Place pickle and jalapeno slices on top, then the second slice of cheese and melt that cheese slice under the broiler.
Smear the inside of the hollowed top half of the bun with mayonnaise and place on top of the burger.
Enjoy with fries.
Hollowing the top half of the bun allows the bun to sit comfortably on top of the burger and garnishes , and is a great vehicle for serving the burger while placing the emphasis on the flavors rather than the bulk of the bread. The hollowed out bread can be used for home-made breadcrumbs for coating other items. The 6oz burger patty fits the size of a French hamburger bun perfectly.

Keepin' It Kosher

Keepin’ It Kosher

by Jen K.

Oh my gawd, this burger is to die for. Start with brisket–the fatty cut, the deckel, you can afford it, look at you, you’re skin and bones–and grind it. Mix it with an egg and some breadcrumbs, a little black pepper too. Then pan-fry a nice, thick, hand-formed patty in a sprinkle of Kosher salt. Not too much; you know your blood pressure can’t take it. Cook it rare so it doesn’t get too tough and put it on an egg-onion roll–make sure it’s fresh and soft like challi–spread with chopped chicken liver, like the kind Bubbe used to serve for Pesach, gawd rest her soul, with real schmaltz. Then saute some yellow onions, not the frou-frou oure-as-the-driven-snow kind that cost five bucks each, the ones that came in a bag were always good enough for me, and put a nice, thick layer on top of the burger. Listen to your mother; she knows what she’s talking about. Then top the onions with one slice each of warm pastrami and corned beef–again, don’t be stingy with the fat, you don’t want dry meat. For the piece of resistance, spread some spicy brown mustard on the meat–that’ll put hair on your chest, eh? Of course you need a good kosher dill pickle on the side, maybe some health salad. To die for, I tell ya. Now be a good kid and make one for your father. He works hard all day putting a roof over your head.
